Raisin, Banana and Apple Muffins

Ingredients

1 cup chopped raisins
Boiling water
1 cup wholemeal SR flour
1 cup SR flour
1 tsp ground cinnamon
1/2 cup soft brown sugar
1 tbsp extra brown sugar
1/2 cup apple sauce
1 egg
1 cup skim milk
2 tbsp vegetable oil
2 tbsp rolled oats
1 mashed banana

Method

1. Place the raisins in a bowl and cover with boiling water, set aside for 30 minutes, then drain.

2. Sift the two flours, cinnamon and 1/2 cup of the brown sugar into a large bowl. In another bowl mix together the apple sauce, egg and milk. To this bowl stir in the oil and mashed banana. Stir the apple mixture and raisins into the flour with a large metal spoon until just combined. The mixture will look lumpy. Do not overmix. Spoon into the tin.

3. Combine the brown sugar and the oats and sprinkle over the muffins. Bake for 20 minutes or until cooked through. Leave in the tin for 5 minutes before turning onto a wire rack to cool.
