1. Heat half the oil in a saucepan. Add chicken fillets , in two batches. Cook, stirring occasionally, until browned all over and cooked through. Remove.
2. Heat remaining oil in same pan. Add ham and capsicum. Cook, stirring, for about 2 minutes, or until capsicum is tender. Remove.
3. Melt butter in same pan. Add plain flour. Cook, stirring, for 30 seconds, or until bubbling. Whisk in chicken stock and seasoned salt. Cook, stirring, until mixture boils and thickens. Add chicken, ham mixture and peas. Cook, stirring, for 2 minutes, or until peas are tender and mixture hot. Stir in parsley.
