Mushroom quesadillas

Ingredients

40g butter
2 tbs oil
2 cloves garlic
600g button mushrooms, sliced
1 cup parsley, finely chopped
8 tortillas
200g cheddar cheese, grated
1 cherry tomatoes, quartered
1 avocado, mashed

Method

For the mushroom filling
In a large frying pan, heat the butter and oil on medium. Add garlic and cook for 2 minutes. Add mushrooms and cook for 8-10 minutes until soft and slightly brown. Stir through parsley, remove and set aside and keep warm.

For the quesadillas
Make the quesadillas one at a time – wipe the frying pan used for the mushroom, and place 1 tortilla in the pan. Add a proportion of the mushrooms so there’s enough to go around and sprinkle with grated cheese.

Place second tortilla on top and cook for 3-4 minutes on each side or until nicely browned and the cheese is soft and gooey. Keep the first quesadillas warm while you cook the next.

For the salad
In a bowl, combine the tomatoes and the avocado mash. You can season to your liking with some salt, pepper and olive oil.

To serve
Remove the quesadillas from the pan and serve along with the tomato and avocado salad.
