El Loco's beef taco

Ingredients

10 corn tortillas
250g thinly sliced beef scotch fillet
30ml “maggi” seasoning sauce
20ml fish sauce
3 tablespoons sugar
2 teaspoons salt

1 Chinese cabbage leave (finely schopped)
1 green shallot (finely chopped)
Half bunch coriander roughly chopped
Haloumi cheese

Salsa verde:
5 green tomatoes, very finely chopped and deseeded
1 bunch of coriander, washed and finely chopped
2 french shallots, finely chopped
1 clove garlic, finely chopped
1 jalapeno peppers, finely chopped
Salt and pepper, to taste
Juice of approximately 2 limes

Method

1. For the salsa verde, mix all ingredients in a bowl and season to taste.
2. Marinate the beef in maggi, sugar, fish sauce and salt and leave for at least 2 hours.
3. Warm the tortillas in a dry pan on medium heat until slightly charred and soft.
4. Fry the beef in a little oil on a high heat until cooked to your liking.
5. Top the tortillas with some beef followed by a tablespoon of salsa verde and some cabbage, shallots and chopped coriander. Grate some haloumi cheese finely on top.
