15 whole cloves
15 cardamom pods
15 black peppercorns
3 tsp fennel seeds
2 cinnamon sticks
4 slices fresh ginger (5mm thick)
1 tsp finely grated orange zest
1/2 tsp vanilla extract
Pure maple syrup, stevia or honey (optional)
Lemon wedges (optional)
1. Combine 3 cups of water with all the spices and the ginger in a saucepan and bring to the boil. Reduce the heat and simmer for 15 minutes.
2. Add the orange zest and vanilla and simmer for another 5 minutes. Strain and add sweetener to taste. Garnish with lemon wedges, if desired.
