1. Cook the bacon in a large non-stick frying pan over medium-high heat for 5 minutes or until crisp. Drain on paper towels, then crumble and set aside.
2. Remove all but 3 tsp of the fat from the pan. Add the cabbage and onion and cook, stirring often,
for 5 minutes or until the vegetables are tender.
3. Whisk the vinegar, olive oil and mustard together in a large bowl. Add the cabbage mixture and pears. Toss gently and season with salt and black pepper. Scatter over the blue cheese and bacon.
