Barbecued chicken and mango salad with roasted cashews

Ingredients

4 mangoes cut into large quarters
1 whole store bought barbequed chicken or 1kg of chicken breasts
4-6 lebanese cucumbers sliced
sweet chilli sauce to serve
½ cup chopped roasted cashew nuts to serve
Vegetable oil

Method

1. Coat chicken pieces lightly in vegetable oil and sprinkle with salt. Cook on barbeque until slightly brown.
2. Divide up the barbecued chicken into portions and arrange onto serving plates with the mango quarters and sliced cucumbers.
3. Drizzle over sweet chilli sauce and sprinkle with roasted cashew nuts.
