Italian-Style Stuffed Artichokes

Recreate traditional Italian stuffed artichokes with this healthy recipe.

Ingredients

4 large artichokes
1 1/2 cups fresh wholemeal breadcrumbs (about 3 slices)
35g provolone cheese, diced
1/4 cup chopped parsley
3 thin slices prosciutto, finely chopped (about 2 tbs)
2 tbs olive oil
2 garlic cloves, crushed

Method

1.Preheat oven to 200°C. Remove artichoke stems and trim 2-3cm from leaves. Blanch in boiling water, about 5 minutes, then drain.
2. Scoop out centre leaves and hairy chokes. Combine breadcrumbs, cheese, parsley, prosciutto and oil. Spoon into artichokes.
3. Stand artichokes in a 20cm x 20cm roasting
pan. Sprinkle with salt and black pepper. Add garlic and 1 cup water. Cover and bake until bottoms are tender, about 1 hour. Serve.
