1. Preheat oven to 200°C.
2. Halve the artichokes lengthways, trim 1-2cm from leaves, scrape out the hairy chokes and
rub with the cut side of a halved lemon.
3. Heat oil in a large ovenproof frying pan over medium heat. Add artichokes, onion, garlic and salt, cook until lightly browned, about 8 minutes. Add 1/2 cup water. Cover and bake, 20 minutes. Uncover and roast until flesh of leaves is tender, about 10 minutes. Splash with vinegar and serve.
