1. Remove stems from artichokes. With scissors, trim 2-3cm from leaves. Stand artichokes upright in a steamer pan with water. Cover and steam until cooked, 15 to 20 minutes. (To test, lift an artichoke by one outside leaf. It should pull out easily.)
2. Whisk together oil, lemon juice, mustard, salt, pepper and thyme in a small bowl. Place artichokes on serving plates, gently spread the leaves apart and drizzle dressing over them.
