Spicy Tomato Mussels

Mussels are rich in iron, which boosts energy. Make the most of your iron intake with this delicious dish.

Ingredients

1 tbs olive oil
1 small onion, chopped
4 garlic cloves, sliced
1/4 tsp chilli flakes
3/4 cup dry white wine
4 dozen mussels, scrubbed and debearded
2 cups cherry tomatoes, halved
1/4 cup basil leaves, chopped

Method

1. Heat the oil in a large pan over medium heat. Add the onion, garlic and chilli flakes, and cook until softened, about 3 minutes. Add the wine and simmer until liquid is reduced by one-quarter, about 5 minutes.
2. Add the mussels and tomatoes, and bring to a boil. Simmer, covered, stirring occasionally, until the mussels open, about 5 minutes. Discard any unopened mussels.
3. Transfer to a serving bowl and stir in the basil. Season with salt and pepper, to taste.
