1. Preheat oven to 190°C. Mix together the chicken, breadcrumbs, coriander, spring onions, garlic, tamari, ginger, oil and 1/4 cup of the hoisin sauce in a large bowl until just combined.
2. Place the mixture into a lightly oiled mini meat loaf dish (about 12cm x 5cm), bake for 10 minutes, pour remaining hoisin sauce over loaf, and bake for another 10 to 25 minutes, or until cooked.
3. Serve with steamed bok choy.
