Marinated Tomato and Mozzarella Pasta

A healthy and satisfying lunch option. Just use wholemeal pasta for extra fibre.

Ingredients

450g grape or cherry tomatoes, halved
12 bocconcini, halved
1/2 cup fresh basil, roughly torn
1 1/2 tbs extra virgin olive oil
1/2 cup red wine vinegar
230g penne, preferably wholemeal
1 cup cooked and shredded chicken breast

Method

1. Combine tomatoes, bocconcini, basil, oil and vinegar in a large serving bowl.
2. Cook pasta per packet directions until al dente, while tomatoes marinate. Drain.
3. Add hot pasta and chicken to tomato mixture, stirring to coat well.
4. Season with salt and black pepper and serve.
