Pizza with Spinach and Tomatoes

Spinach makes an ideal pizza topping. It's loaded with vitamins B, C and E. Make the most of it with this easy pizza recipe.

Ingredients

2 wholemeal Lebanese breads
400g spinach, steamed, cooled and squeezed to remove excess water
1 cup low-fat ricotta cheese
1/2 cup grated mozzarella cheese
1/2 cup packed fresh basil leaves, chopped
1 garlic clove, crushed
1/8 tsp chilli flakes
2 plum tomatoes, thinly sliced
2 tbs grated parmesan cheese

Method

1. Preheat oven to 230°C. Place breads on a large baking tray.
2. Combine the spinach, ricotta, mozzarella, basil, garlic and chilli in a medium bowl.
3. Bake breads for 5 minutes. Spread each piece with half the spinach mixture, leaving a 1cm border all around. Top with tomatoes and scatter parmesan over.
4. Bake for a further 8 to 10 minutes or until topping is heated through and bread is crisp. Stand for 5 minutes, then cut each pizza into 6 slices. Serve 2 slices per person.
