Salmon with lemon butter sauce

Ingredients

2 salmon fillets
1 small glass dry white wine
100g Lurpak Unsalted butter, chopped into chunks
Squeeze of lemon juice

Method

1. Heat the grill to full heat, season the salmon with black pepper and grill skin side up for 4 minutes until the skin is crisp, turn over and cook for a further few minutes until cooked through. Timing will depend on the thickness of the fish.

2. While the fish is cooking, bring the wine to the boil in a small pan, reduce by half then whisk in the butter one chunk at a time.

3. Add the lemon juice and season to taste. Once the fish is done, serve with the lemon butter sauce spooned over the top.

Notes

Simple and juicy with a bit of bite, this lemony salmon pairs beautifully with a side of greens or a pile of herby new potatoes. The sauce is also great with griddled asparagus, topped with a few parmesan shavings.
