1 Toss chat potatoes, tomatoes and olive oil in a large roasting pan. Sprinkle with half the dried oregano.
2 Cook in a moderate oven (180C) for 20 minutes.
3 Add chicken fillets to roasting pan. Sprinkle with pancetta and remaining dried oregano. Drizzle with balsamic dressing.
4 Return roasting pan to oven. Cook for a further 20 minutes, or until chicken is cooked through. Season with salt and pepper.
5 Sprinkle chicken bake with kalamata olives. Garnish with fresh parsley.
