Delicious, easy, quick - this pork dish is everything you want in a weeknight meal!
Ingredients
4 pork loin cutlets (900g)
¹/³ cup shelf-life parmesan
2 eggs, lightly beaten
2 cups fresh breadcrumbs
2 tblsps chopped fresh sage
¼ cup olive oil
100g salad leaves
1 lemon, cut into cheeks
Method
1 Coat pork in parmesan. Dip in egg. Toss in combined breadcrumbs and sage, pressing breadcrumbs on firmly. Season both sides
with salt and pepper.
2 Heat oil in a large non-stick frying pan over a medium to low heat. Add pork. Cook for 7 to 9 minutes on each side, or until tender.
3 Serve with salad leaves and lemon cheeks.
