1 Coat pork in parmesan. Dip in egg. Toss in combined breadcrumbs and sage, pressing breadcrumbs on firmly. Season both sides
with salt and pepper.
2 Heat oil in a large non-stick frying pan over a medium to low heat. Add pork. Cook for 7 to 9 minutes on each side, or until tender.3 Serve with salad leaves and lemon cheeks.
