Mushroom Mini Pizzas

Use mushrooms for your pizza base and you have a perfect meal without the added carbs.

Ingredients

4 small portobello mushrooms (about 60g each)
6 tbs store-bought pasta sauce
1/3 cup low-fat mozzarella
4 tsp store-bought basil pesto

Method

1. Preheat oven to 200°C. Place mushrooms underside down on a baking tray and roast for 20 minutes.
2. Flip and fill each cap with 1 1/2 tbs pasta sauce; sprinkle with mozzarella.
3. Bake until cheese melts and mushrooms are tender, about 2 minutes.
4. Top each mushroom with 1 tsp basil pesto and serve.
