Spicy Smashed Potatoes

When it comes to potatoes, smashed is the new mashed!

Ingredients

1.5kg medium red delight potatoes, halved
ΒΌ cup olive oil

Sour cream and fresh chives, to serve

Seasoning Mix

1 tblsp spicy barbecue seasoning
2 tsps finely chopped fresh rosemary
1 tsp sea salt

Method

1 Boil, steam or microwave potatoes for 15 to 20 minutes,or until just tender.

2 To make seasoning mix, combine all ingredients in a bowl.

3 Toss potatoes in half the oil. Divide between two large non-stick oven trays. Using the palm of your hand, press down gently on potatoes to slightly flatten. Drizzle with remaining oil. Sprinkle with half the seasoning mix.

4 Cook in a hot oven (200C) for 30 minutes. Carefully turn potatoes over. Cook for a further 15 minutes, or until golden and crisp. Sprinkle with remaining seasoning.

5 Serve with sour cream and chives.

Notes

This dish can be prepared to the end of Step 3 up to several hours ahead. Store in the fridge. Remove from the fridge 40 minutes before cooking. Chop the chives and place in a bowl before serving.
