Sour cream and fresh chives, to serve
Seasoning Mix1 tblsp spicy barbecue seasoning
1 Boil, steam or microwave potatoes for 15 to 20 minutes,or until just tender.
2 To make seasoning mix, combine all ingredients in a bowl.
3 Toss potatoes in half the oil. Divide between two large non-stick oven trays. Using the palm of your hand, press down gently on potatoes to slightly flatten. Drizzle with remaining oil. Sprinkle with half the seasoning mix.
4 Cook in a hot oven (200C) for 30 minutes. Carefully turn potatoes over. Cook for a further 15 minutes, or until golden and crisp. Sprinkle with remaining seasoning.5 Serve with sour cream and chives.
This dish can be prepared to the end of Step 3 up to several hours ahead. Store in the fridge. Remove from the fridge 40 minutes before cooking. Chop the chives and place in a bowl before serving.
