Beef Satay Skewers with Asian salad

Ingredients

750g rump steak, thinly sliced
250ml can satay sauce
1 cup mint leaves, finely chopped
¾ cup Thai-style salad dressing
1 Lebanese cucumber, thinly sliced
¼ red cabbage, thinly sliced
100g salad leaves
150g bean sprouts

Method

1 Thread steak onto 12 wooden skewers. Place in a shallow dish. Coat in ½ cup satay sauce.

2 Cook in a large, oiled non-stick frying pan for 3 minutes on each side, or until cooked through. Remove and keep warm. Wipe pan clean. Heat remaining sauce in pan.

3 Add mint to dressing in a medium jug. Combine remaining ingredients and some of the dressing in a bowl.

4 Serve skewers with satay sauce, salad and remaining dressing.
