1 Thread steak onto 12 wooden skewers. Place in a shallow dish. Coat in ½ cup satay sauce.
2 Cook in a large, oiled non-stick frying pan for 3 minutes on each side, or until cooked through. Remove and keep warm. Wipe pan clean. Heat remaining sauce in pan.
3 Add mint to dressing in a medium jug. Combine remaining ingredients and some of the dressing in a bowl.4 Serve skewers with satay sauce, salad and remaining dressing.
