Salmon & Chive Pies

Serve these delicate salmon pies with a fresh salad.

Ingredients

2 sheets frozen puff pastry, thawed, quartered
1½ cups grated Tasty cheese
4 eggs
¾ cup thickened cream
½ cup water
415g can pink salmon, drained
2 tblsps finely chopped fresh chives
120g salad leaves

Method

1 Grease and line eight holes of 2 x 6-hole jumbo muffin pans with pastry. Trim to fit. Divide cheese among pastry cases.

2 Whisk eggs, cream and water in a bowl. Season with salt and pepper. Add flaked salmon and chives. Whisk well.

3 Divide mixture evenly among pastry cases.

4 Cook in a moderate oven (180C) for 25 minutes, or until golden and puffed. Serve with salad.
