Icing
2 cups pure icing sugar, sifted1 Grease a 12-hole non-stick friand pan (½-cup capacity).
2 Combine butter, almond meal, icing sugar, rind, juice, tequila and flour in a large bowl. Fold in egg whites. Divide mixture evenly among pan holes. Smooth over tops.
3 Cook in a moderately slow oven (160C) for about 25 minutes, or until firm to touch. Cool in pan for 10 minutes, before turning out onto a wire rack to cool.
4 To make icing, stir icing sugar into tequila in a medium bowl. Add enough juice to give a goodpouring consistency.
5 Pour over friands. Decorate with sliced blood orange.Tip: If your prefer a non-alcoholic cake, you can replace tequila with extra juice.
