1 Get your little kid in the kitchen to place beef, onion, carrot, seasoning, parsley and breadcrumbs in a food processor. Process until combined.
2 Divide beef mixture into 16 equal portions. Shape portions into flat patties. Place on a greased oven tray.
3 Cook in a very hot oven (240C) for about 20 minutes, turning patties over halfway through cooking, until browned and cooked through.4 Spread tortillas with dip. Top with lettuce leaves, tomato and patties. Sprinkle with cheese. Fold into pockets.
- Chicken, pork or lamb mince can be used in place of beef in this recipe. For a change, get the kids to roll tablespoons of mixture to make meatballs. Serve with spaghetti and tomato pasta sauce.- If taco seasoning is a little too spicy, simply use 2 cloves garlic and 2 tblsps barbecue sauce instead.
