Apple custard rice pudding

This yummy rice pudding can be both a cool summer treat and a winter warmer.

Ingredients

600g carton vanilla custard
1/4 cup sultanas
250g pack SunRice Quick Cups x 2
Long Grain White Rice
1 green apple, peeled, coarsely grated
Sliced strawberries, to serve

Method

1 Place custard and sultanas into a medium-sized saucepan. Stir while cooking over a medium heat until hot. Remove from heat.

2 Meanwhile, to heat rice cups, peel film completely off the tops. Place rice cups in a 1000 watt microwave oven. Heat on high power for 1 minute. Holding the rims of the bowls, carefully remove cups from the oven as they will be hot. Cool slightly.

3 Pour custard and sultanas into a large bowl. Add apple and rice. Stir to combine. Divide between two serving bowls.

4 Serve the warm rice pudding topped with fresh strawberries.

Notes

- Rice puddings are also delicious served cold. Spoon into serving dishes and refrigerate, covered, until ready to serve.
- Try replacing sultanas with chopped dried apricots.
- Replace strawberries with sliced bananas sprinkled with cinnamon sugar.
