1 Finely shred rind from one orange, and juice both.
2 Cook steaks in an oiled frying pan until cooked to your taste. Remove. Cover to keep warm. Add juice, Dijonnaise, Ω cup water and rind. Bring to boil. Simmer for 10 minutes, or until thickened. Season.3 Cook potatoes and beans. Combine with olives, tomatoes and parsley. Season. Divide among plates. Top with steak. Drizzle with orange sauce.
