1 Finely shred rind from one orange, and juice both.
2 Cook steaks in an oiled frying pan until cooked to your taste. Remove. Cover to keep warm. Add juice, Dijonnaise, Ω cup water and rind. Bring to boil. Simmer for 10 minutes, or until thickened. Season.
3 Cook potatoes and beans. Combine with olives, tomatoes and parsley. Season. Divide among plates. Top with steak. Drizzle with orange sauce.
