Chocolate Pancakes with Berries

Ingredients

2 cups gluten free Self Raising flour
2 ½ Tbsp white sugar
3 Tbsp cocoa powder
1 egg
2 cups Vitasoy Soy Milky Chocolate
1 Tbsp soy free dairy free spread, melted
1 can mixed berries in syrup, drained
Gluten free dairy free chocolate topping (optional)

Method

Sift flour, sugar and cocoa into a large bowl. Combine egg and Vitasoy Soy Milky Chocolate in a bowl. Pour into dry ingredients and mix well with spoon until well combined. Stir in melted dairy free spread. Let sit for 10 minutes.
Heat frypan over low-medium heat for 2 minutes. Spray with non-stick spray, pour on 3-4 tablespoons of batter for each pancake to be made.

Heat for 2-3 minutes or until bubbles start to appear. Flip and continue to cook for 2 minutes on other side. Remove from heat.

Serve two pancakes on each plate and top with ¼ cup berries (and chocolate topping if desired).
