10 minutes with: George Calombaris and Gary Mehigan

George Calombaris and Gary Mehigan took 10 minutes out from their hectic Mastechef schedule to talk us about the Good Food and Wine show, who they would most like to cook for and whats the weirdest thing they have ever eaten.

What’s your favourite dish to make and why?
Roast chicken. You can’t beat it and it reminds me of home, I would consider this my ultimate comfort food.Which 5 guests would you most like to have at a dinner party?
Barack Obama, Dalai Lama - oops had lunch with him! Billy Connolly, my Granddad and Asher Keddie.What do you love about Australian produce?
I love that it is fresh, clean and seasonal.

What influences you when you cook?
The produce and the seasons and always the last great meal that I ate.

What would be your ultimate meal?
A banquet of all the good things in life - fois gras, Iranian osetre caviar, wild mushrooms, lobster, pheasant, sea bass, plump scallops and the list goes on and on...What are your 5 most used ingredients in the kitchen?
Tomatoes, garlic, eggs, butter and fresh herbs.

What’s the weirdest thing you have ever eaten?
Pigs throat in Hong Kong – which was also part of a soup that also contained pigs blood pudding – yum!

What is your perfect food and music match?
In our kitchen at work we always have heavy techno playing, I love to cook to techno and I work to the beat which means I work a lot quicker!You have 10 minutes to make a snack, what would you make?
Quick fritatta - Persian feta, baby spinach, eggs, fresh dill and tarragon - 5 minutes without toast and 10 minutes with.How do you plan to wow audiances at this years Good Food and Wine Show?
Even though George and I insist on having lots of fun we want the audience to always go away with a couple of good cooking tips and feel inspired to go home and good.
