Tim Noye is the creative brain behind the fare at Sydney's Secret Supper Cinema. Yahoo!7 Lifestyle asked him what it was like to devise a Moulin Rouge-themed menu for an event held at a secret locations.


How did your creative process for this menu start?

Before writing any menu I look at the season, go to the markets and chat with my suppliers. I will then go off, bounce some ideas around and play around with a few different concepts. The creative juices start to flow once I begin to marry certain flavours together. The next step is to develop these ideas into plated designs, great fun really.

What were some of the challenges with matching food to a movie?

Being that Cooking by Design tailors its menus around its clients, the challenge in writing the menu for this particular movie was really enjoyable. This has been our first time in having the opportunity to match a menu specifically to a movie and It certainly made us think about how we could best capture the essence of it and then replicate that on a plate.
 I guess the main challenges for us were to ensure we were in cooperating the appropriate colours into the dishes, being that they are thousands to choose from in this movie, It took a while before we were happy with the ones to use.

Had you already seen Moulin Rouge before you were asked to create a menu to match it?

I had seen the movie a couple of times but ages ago so watched back to back for a day!

What kind of inspiration did you take from the movie to create the menu?

The key inspiration in matching this menu to the movie was the period in which it was set, It's fashion and trends in that time, the colours, the sounds and most importantly what they were eating in the time of Moulin Rouge.

Did you take inspiration for the food from anywhere besides Moulin Rouge?

When tailoring a menu to an event you want to try and keep it directly linked to that event, too many other inspirations and you just end up with a mismatch, I try and keep the majority of my inspiration from what It is I'm creating for and draw any thing else from previous creations, repertoires and training.

How closely are the dishes tied to the movie?

There are elements of the menu that will scream Moulin Rouge, there are also elements that are more subtly tied, this provides a nice balance to the menu I think.

What do you love about French cuisine?

Wow, that's a big question, how much time do you have?!
I love everything about It, It's past and where It's heading In the future, It's complexity and It's simplicity and the fact that when you visit the country and eat there, you generally spend the best part of your day doing just that, eating and drinking...paradise!

How will the atmosphere enhance the dining experience?

The location of Secret Supper Cinema is something else, the menu has been specifically designed to complement that and when combining all three things you're left with what will be a fantastic experience. Imagine being wined and dined in the company of good friends and family whilst watching a top notch film, doesn't get much better than that!
