1. Preheat the oven to 150°C.
2. Divide the dough into 20 equal pieces (about 17g each) and keep covered with a damp cloth to
prevent from drying out. Take one piece of dough and form it into a sausage shape, then roll out to a stick approximately 18cm long and about the thickness of a little finger. Transfer to a lightly-oiled baking tray and cover with cling film while you continue to shape the rest of the dough into bread sticks. Allow around 2.5cm of space between each bread stick.
3. Brush the bread sticks with beaten egg and sprinkle over the parmesan cheese, then bake for 18 to 20 minutes for soft bread sticks or for 30 to 35 minutes for crisp bread sticks. Cool on a wire rack.
★ Freezing and storing: the dough can be frozen after it is divided into 20 pieces, as in the mini pizza recipe.
★ The cooked bread sticks will keep fresh in an airtight tin for a day (if soft) or 5 days (if crisp). They can also be frozen
