1 Cook the rice in a small saucepan of boiling water following packet directions, or until tender. Drain well.
2 Meanwhile, heat ½ teaspoon of the oil in a large wok on medium-high. Add the chicken and stir-fry for 2-3 minutes or until just cooked. Transfer to a plate. Heat the remaining oil in the wok on medium-high. Add the lemongrass, ginger, chilli and garlic. Stir-fry for 30 seconds. Add the capsicum, corn, snow peas and asparagus. Stir-fry for 2 minutes. Add the water, cover and cook for 1-2 minutes or until the vegetables are tender but crisp.
3 Return the chicken to the pan with the fish sauce and brown sugar. Toss well to combine. Remove pan from heat and toss through the basil leaves.
4 Divide rice between bowls and top with chicken stir-fry to serve.
