Thai chicken stir-fry

A simple, delicious meal for the whole family.

Ingredients

  • 70g (1⁄3 cup) basmati rice
  • 1 teaspoon olive oil
  • 250g chicken breast fillet, trimmed of fat, thinly sliced across the grain
  • 1 lemongrass stalk, white part only, finely chopped
  • 2cm piece of fresh ginger, finely chopped
  • 1 small fresh red chilli, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 red capsicum, cut into thin strips
  • 100g packet baby corn, halved lengthways
  • 100g snow peas, trimmed
  • 1 bunch asparagus, woody ends trimmed, diagonally sliced into 4cm pieces
  • 1 tablespoon water
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar
  • 1 cup firmly packed small fresh basil leaves

Method

1 Cook the rice in a small saucepan of boiling water following packet directions, or until tender. Drain well.

2 Meanwhile, heat ½ teaspoon of the oil in a large wok on medium-high. Add the chicken and stir-fry for 2-3 minutes or until just cooked. Transfer to a plate. Heat the remaining oil in the wok on medium-high. Add the lemongrass, ginger, chilli and garlic. Stir-fry for 30 seconds. Add the capsicum, corn, snow peas and asparagus. Stir-fry for 2 minutes. Add the water, cover and cook for 1-2 minutes or until the vegetables are tender but crisp.

3 Return the chicken to the pan with the fish sauce and brown sugar. Toss well to combine. Remove pan from heat and toss through the basil leaves.

4 Divide rice between bowls and top with chicken stir-fry to serve.
