For best results, tightly pack the dim sims into the bamboo steamer to ensure the wrappers do not slip off.

Ingredients

300g pork mince
1 clove garlic, peeled, minced
1 eschalot, finely diced
½ cup Chinese cabbage (wombok), very finely chopped
2 Tbsp hoisin sauce
1 Tbsp oyster sauce
24 wonton wrappers
Chilli sauce, to serve

Method

1| Combine all ingredients, except wrappers, in a large bowl. Put 2 teaspoons of the filling in centre of each wrapper. Scrunch up sides, leaving filling exposed.

2| Line a steamer basket with baking paper. Arrange dim sims, in a single layer, in the basket.

3| Pour water into a large pan or wok to 5cm and bring to a simmer. Put basket over the pan and steam for 8-12 minutes or until wrappers are transparent and filling is firm. Serve with chilli sauce.
