Homemade chutney

A homemade option for chutney to put on chickens, rice and even burgers!

Ingredients

1 Tbsp olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
1kg ripe tomatoes, chopped
2 Tbsp malt vinegar
2 Tbsp Worcestershire sauce
1 Tbsp caster sugar
Salt and freshly ground black pepper, to season

Method

1. Heat oil in a pan over a medium heat. Add onion and cook for 3 minutes or until soft. Add garlic and cook for a further minute. Add tomato, vinegar, Worcestershire sauce and sugar, then stir until sugar is dissolved and mixture comes to the boil.
2. Simmer for 25 minutes or until sauce thickens and is reduced by half. Cool slightly, and season with salt and pepper. Serve.
