Hot-chocolate teacups

The kids will love this cute dessert that is very easy to make!

Ingredients

1 cup plain flour
1/4 cup rice flour
1/4 cup caster sugar
100g unsalted butter
2 Tbsp milk
2 cups icing sugar
1 eggwhite
Squeeze lemon juice
Pink food colouring
40 white marshmallows
20 musk Lifesavers, halved
100g dark chocolate, chopped
100ml cream
Hot-chocolate powder

Method

STEP 1

Preheat oven to 160ºC. Combine flours, sugar and butter in a food processor and pulse until mixture resembles coarse breadcrumbs. Add milk and pulse several more times. Roll out dough to 3mm thick and cut out 40 discs using a 5cm round cutter. Arrange on a baking paper-lined tray and bake for 15 minutes until golden brown. Cool biscuits on a wire rack.

STEP 2

Put icing sugar, eggwhite and lemon juice in the bowl of an electric mixer and mix on high for 3 minutes, until smooth. Tint with food colouring. Coat 1 side of each biscuit with icing. Press a marshmallow onto each biscuit.

STEP 3

Using remaining icing, attach a Lifesaver half to each marshmallow to form handles of teacups.

STEP 4
Melt chocolate and cream in a pan over a low heat. Let cool, stirring often, until mixture holds its shape when spooned. Spoon a small peak of chocolate on top of each teacup and dust with powder.

    I made these for my workmates (with Tic Toc biscuits) To say they were a hit was a major understatement. Thanks heaps

    I remember eating these at a slumber party when I was 11 - that was 31 years ago! However, the mum of the birthday girl used upside down TicToc biscuits instead.
