1. Pour boiling water over bran in a medium bowl. Stir and let stand for 1 hour.
2. Preheat oven to 200C. Brush oil into bottoms only of 12 muffin tins. Add banana, egg, oil, brown sugar and vanilla essence to bran mixture and mix well.
3. Sift flour, milk powder, baking powder and bicarb-soda in a medium bowl. Add bran and banana mixture all at once to flour mixture. Stir gently with a fork until all ingredients are just moistened.
4. Spoon batter evenly into each muffin tin, filling two-thirds full. Bake 15-20 minutes until golden. Serve warm with butter.
