French Toast

Come on, I dare you, who doesn't like French toast? Actually the best French toast I ever had was in Canada, where they serve it with crispy bacon and maple syrup. No, seriously, it is sooooooooo good. Try making this for the missus on Sunday morning, you'll get out of mowing the lawn for sure.

Ingredients

6 eggs
1 tsp vanilla essence
400ml cream
200g sugar
Finely grated zest of 2 oranges
60g butter
8 slices thickly sliced white sandwich bread
8 crispy bacon rashers, to serve
Maple syrup, to taste
Extra cream, lightly whipped, to serve

Method

1. Crack eggs into a large bowl. Add vanilla, cream, sugar and orange zest into eggs, then whisk until well combined.

2. Heat butter in a large heavy-based pan. Dip bread slices, one at a time, into the egg mixture. Cook egg-coated bread slices on each side until bread is golden brown. Cook the bacon in a pan until crispy.

3. Pour maple syrup over each slice of toast and top with 2 rashers of hot bacon. Serve with a bowl of whipped cream on the side, if desired.

    Every Saturday after taking my son (2 years 2 months) for swimming lessons we have 'dads special toast'. My wife came upon this recipe a couple of days ago and said I should try it out. I halved the recipe and in a word... GREAT! Unfortunately I didn't have any beacon, that will be for next time. My son loved it, although he did dip his slices of french toast on mine as it had the maple syrup.
