To make a bacon and radish salad, finely slice strips of crispy bacon, radishes, cherry tomatoes and red onion and toss together with basil leaves, lemon juice and olive oil
1. Put flours, baking powder, spices, salt, egg and milk in a large bowl and whisk until smooth. Add shallot, mint and corn and stir well to combine.
2. Heat oil in a frying pan over a medium heat. Add heaped tablespoonfuls of mixture to pan. Cook, in batches, for 2 minutes on each side or until golden and firm. Serve with salad.
