Plum pork and vegetable noodles

Ingredients

1 teaspoon olive oil
250g pork fillet, trimmed of fat, thinly sliced diagonally
1 teaspoon cornflour
60ml (¼ cup) SPC Plum Sauce
2 teaspoons salt-reduced soy sauce
½ red onion, cut into thin wedges
1 garlic clove, finely chopped
500g packet frozen stir-fry vegetable mix
1 bunch baby bok choy, trimmed, washed, cut into 4cm lengths
200g Trident Udon Noodles
Fresh coriander leaves, to serve (optional)

Method

1. Heat half of the oil in a large wok on high. Add the pork. Stir-fry for 2 minutes or until the pork is just cooked. Transfer to a plate.

2. Put the cornflour in a small bowl. Gradually whisk in the plum sauce and soy sauce. Set aside.

3. Heat the remaining oil in the wok on medium-high. Add the onion and garlic. Stir-fry for 1 minute. Add the vegetables. Stir-fry for 2 minutes.
Add the bok choy. Cook, covered, for 2 minutes or until the vegetables are just tender. Add the noodles, plum sauce mixture and pork. Toss until combined and heated through.
