1. Preheat oven to 200°C (fan-forced). Line 3 baking trays with baking paper.
2. Heat the oil in a medium non-stick frying pan on medium-high. Add the beef mince and garlic. Cook, stirring often, for 2 minutes or until the mince changes colour. Add the coriander, cumin and chilli. Cook, stirring, for 30 seconds. Add the onion, corn and capsicum. Toss to combine.
3. Spread the tomato paste over each wrap. Top with mince mixture.
4. Bake for 10 minutes. Sprinkle the cheese over. Bake for 5 minutes or until the cheese melts.5. Top with tomato and sprinkle with mint leaves. Top with yoghurt, if using, to serve. Accompany with lemon wedges and salad leaves.
