Baked bean and spinach toastie

Nothing beats a baked bean toastie but you can now make it healthier by adding spinach which is full of antioxidants.

Ingredients

4 slices wholemeal grain bread or gluten-free bread
20g (2 cups) baby spinach leaves
¼ red capsicum, cut into thin strips
130g can salt-reduced baked beans, drained
40g (1⁄3 cup) 30% reduced-fat grated cheddar cheese
Snow pea sprouts, to serve (optional)

PER SERVE: 1174kJ, protein 15.2g, total fat 8.2g (sat. fat 3.9g), cholesterol 14.4mg, carbs 32.7g, fibre 7.5g, sodium 450mg. Carb exchanges: 2¼. GI estimate: low. Gluten-free option.

Method

1. Preheat a toasted sandwich maker. Put 2 bread slices on the sandwich maker. Top each with spinach, capsicum and baked beans. Sprinkle with cheese. Add remaining bread slices.

2. Toast for 5 minutes or until golden brown. Cut each sandwich in half to serve. Sprinkle with snow pea sprouts, if you like, to serve.

Tip:
You can cut a quarter of the sodium (to 340mg) per serve by omitting the cheese. ➤
