Angus Monfries open steak sandwich recipe

Ingredients

2 x 225g Angus fillet steak, flattened

Marinade:
1 clove garlic, chopped
1 Tbsp seeded mustard
2 fresh bay leaves (1 dry)
3 fresh thyme stalks/ leaves only removed
4 Tbsp olive oil
2 Tbsp red wine vinegar
1 Tbsp worcestershire sauce

sea salt and ground black pepper to taste

Onions:
2 Tbsp olive oil

1 red onion, peeled, halved and finely sliced

Sides:
2 Slices of sough bread, grilled
2 Tbsp Tomato chutney
150g butter lettuce - leaves only, washed and dried
1/2 Beetroot, peeled and grated
2 Tbsp Goat feta
Notes

You can buy Angus fillet steak from most butchers and supermarkets. If you can't find it buy a lean cut of steak instead.

Method

1. Place steaks in a shallow dish, mix marinade ingredients together with a whisk and pour over steaks. Cover and allow to rest for at least 30 minutes.

2. Heat BBQ grill plate, or fry pan - toss sliced onions in a bowl with oil, then place onions on grill when hot, stir regularly for 20 minutes or until golden and crispy. Set aside.

3. Place sliced bread on grill and toast - 1 minute each side, set aside.

4. Remove steaks from marinade, pat dry, then place on grill for 1 1/2 minutes each side or for desired cooking time.

5. To assemble, place grilled toast on a plate, spread 1 Tbsp chutney on each followed by lettuce leaves, place minute steak on top followed by onions, beetroot and finally top with a dollop of feta. Then serve immediately.
