2 x 225g Angus fillet steak, flattened
Marinade:sea salt and ground black pepper to taste
Onions:1 red onion, peeled, halved and finely sliced
Sides:You can buy Angus fillet steak from most butchers and supermarkets. If you can't find it buy a lean cut of steak instead.
1. Place steaks in a shallow dish, mix marinade ingredients together with a whisk and pour over steaks. Cover and allow to rest for at least 30 minutes.
2. Heat BBQ grill plate, or fry pan - toss sliced onions in a bowl with oil, then place onions on grill when hot, stir regularly for 20 minutes or until golden and crispy. Set aside.
3. Place sliced bread on grill and toast - 1 minute each side, set aside.
4. Remove steaks from marinade, pat dry, then place on grill for 1 1/2 minutes each side or for desired cooking time.
5. To assemble, place grilled toast on a plate, spread 1 Tbsp chutney on each followed by lettuce leaves, place minute steak on top followed by onions, beetroot and finally top with a dollop of feta. Then serve immediately.
