Golden chocolate crackles

There is nothing like a chocolate crackle to celebrate something special.

Ingredients

300g dark cooking chocolate
3 cups Rice Bubbles (To make these Gluten free buy gluten free rice bubbles from the health food stores - Kelloggs rices bubbles are NOT gluten free)
1 cup shredded coconut
100g cooking chocolate, melted
1 sheet edible gold leaf, for decorating
Notes

Use melted chocolate to stick the stars to the crackles. They will keep in an airtight container for up to a week

Method

1| Melt chocolate in a large heatproof bowl set over a saucepan of simmering water. Stir until chocolate is melted. Add Rice Bubbles and coconut and stir to combine.

2| Line a 12-hole muffin tin with patty cases. Evenly divide mixture between cases and set aside to cool for 30 minutes.

3| Meanwhile, make chocolate stars. Line an oven tray with baking paper, then spread thinly with melted chocolate. Allow to set. Using a star-shaped cookie cutter, cut out stars and lift off with a palette knife.

4| Top each crackle with a chocolate star and pieces of edible gold leaf. Serve.

    Note on Golden Chocolate Crackles: This recipe is only gluten free if you use gluten free rice bubbles. Most rice bubbles from more popular brands are not gluten free as they contain gluten containing cereals such as barley.
