This is the most wonderful recipe for choc mousse, made with only chocolate and water! The key is in the whipping technique, and the result is simply sensational.

Ingredients

300g dark chocolate
240ml water
Thickened cream and fresh berries, to serve

Method

1. Put chocolate and water in a heatproof bowl over a saucepan of simmering water and heat until melted. Put bowl inside a larger bowl and pour in enough iced water to come up the sides. Using an electric mixer, whip for about 5 minutes or until mixture cools and thickens.

2. Spoon into glasses and chill until set. Top with cream and berries to serve.
