1. Put eggwhites in a medium bowl and whisk until frothy. Dip each steak in eggwhite, then season with salt and pepper. Set aside to dry for 5 minutes.
2. Heat a barbecue grill to medium. Add steaks to grill and cook for 6 minutes on each side or until medium-rare, then put on resting rack for 4 minutes.
3. Meanwhile, heat a wok burner or barbecue grill to high. Put sesame oil in a medium wok and add to burneror grill. Add shallot, ginger, garlic and mushroom and cook for 3 minutes or until mushroom is softened. Add oyster sauce and cook, stirring, for 1 minute or until thickened. Mix in snow peas and onion.
4. Arrange mushroom mixture on serving plates. Top with steak to serve.
