Ingredients
250g self-raising flour
1 Tbsp mixed spice
300g caster sugar
2 eggs
250ml milk
125g unsalted butter, melted
1 Tbsp ground cinnamon
Method:
1 | Preheat oven to 180°C. Line a 27 x 18cm slice pan with baking paper. Sift flour and mixed spice into a large bowl, then stir in 250g of the sugar, eggs, milk and butter. Put remaining sugar and cinnamon in a small bowl. Stir to combine.
2 | Spoon half the batter into prepared pan, then top with half the cinnamon sugar. Pour remaining batter on top, then finish with remaining cinnamon sugar. Bake for 30 minutes or until firm to touch. Cool completely on a wire rack, then slice and serve.
Fruity twist
For a different flavour, poach a handful of chopped prunes in a little sherry, then cool and fold into the batter before assembling.
