Ingredients
300g plain flour
260g unsalted butter, cold, diced
90g raw sugar
1 egg
800g tinned pears, drained, diced
200g blackberry jam
75g caster sugar
200g blanched almonds
150g frozen mixed berries
Method
1 | Preheat oven to 180°C. Line a 27 x 18cm slice pan with baking paper. Put 175g of the flour, 140g of the butter and raw sugar in a food processor and pulse until a coarse crumb forms. Add egg and pulse until just combined. Press into the base of prepared pan and bake for 15 minutes or until golden. Set aside to cool.
2 | Mix pears and blackberry jam. Put the remaining flour in food processor with caster sugar and almonds. Pulse until a coarse crumb forms, then add remaining butter and continue pulsing to mix. Stir half the almond mixture into the pears. Spoon almond and pear mixture over the cooked base.
3 | Scatter frozen berries over, then crumble remaining almond mixture on top and bake for 45 minutes, until golden and firm to touch. Cool completely on a wire rack. Slice and serve.
