Preparation time | 15 minutes
Cooking time | 35 minutes
Makes | 24 bars
Ingredients
120g dark chocolate
200g unsalted butter
100g white chocolate
4 eggs
200g caster sugar
30g dark cocoa powder
20g instant coffee powder
100g plain flour
180gcream cheese, at room temperature
1 tsp vanilla extract
Method
1 | Preheat oven to 170°C. Line a 27 x 18cm slice pan with baking paper. Put dark chocolate and half the butter in a small heatproof bowl. Put white chocolate and remaining butter in a separate small heatproof bowl. Put each bowl over a pan of barely simmering water, then stir until just melted. Remove bowls from heat. Beat 2 eggs and 50g of the sugar into one bowl. Repeat with the other bowl.
2 | Sift cocoa, coffee and 50g of the flour together. Fold into dark chocolate mixture. Beat cream cheese until smooth, then whisk into white chocolate mixture with remaining flour and vanilla.
3 | Spoon both mixtures into prepared pan, in alternate dollops, then stir gently with a small spoon to create marble effect. Bake for 35 minutes or until just set. Cool completely on a wire rack. Slice and serve.
