Chicken is very different to meat in that it can get overcooked and burnt quickly. If you are grilling chicken breast make sure you cook it on medium and take it off the grill a few minutes before it's cooked as it cooks through further when off the grill. When poaching make sure you watch and test your chicken because if you leave it in boiling water for too long it ends up being way too chewy.

    If you're poaching chicken, don't let the water boil at all! Keep it at the gentlest of simmers and the meat will be superbly tender. I think a common misconception that leads to some big cooking mistakes is that boiling = violently bubbling water. If there is even the tiniest constant stream of bubbles, your water is at a boil.
