Sugar has lived a very interesting life. From ancient China to Willy Wonka's Chocolate factory it has made its mark on all over the world, now one of the western world's most converted staples, it sits in the pantry waiting to be spooned into coffee or added to a batch of cupcake batter.

Dear Australia: Sugar (in this case sucrose as distinct from glucose, fructose, dextrose, lactose mannose etc) has the chemical formula C22-H22-O11 and this is the form of all sucrose. The miniscule quantities of colouring in brown sucrose result in it being rather like white sucrose. The human palette may taste a few trace elements in brown sugar, (mainly treacle) but I suspect there are few significant differences between brown and white. Remember - scientia omnia vincit
