WH’s clever chef Teresa Cutter gives the Caesar salad a healthy twist… It’s fit for a king

Made-over Caesar salad
Serves 2

Salad
  • 1 baby cos lettuce, washed, dried, separated
  • 100g thinly sliced lean bacon, grilled
  • 1 tomato, sliced
  • 2 soft-boiled eggs, sliced
  • 30g shaved Parmesan cheese
  • 2 slices wholemeal sourdough, toasted, diced

Dressing
  • 1 avocado, mashed
  • 2 tbs yoghurt
  • Juice of one lime
  • 2 tbs chopped parsley
  • pinch of freshly ground black pepper
  • pinch of sea salt

  1. Combine dressing ingredients. Set aside.
  2. Break up lettuce and put in a large bowl with bacon, tomato and egg.
  3. Garnish with Parmesan and sourdough.
  4. Serve with dressing on the side.

I agree with judithtamock- it sounds yummy but it is definitely not Caesar Salad.

I agree, it sounds delicious and i will definately try it but it is not a ceaser salad and to call it that is a crime!

Typical 'WOMENS' ' [profane]y' comments....she's only trying to give it a little something different and make it alittle bit healthier...if you don't want to try it DON'T!!! just stop the Tupperware party squabling..
