
Ingredients
4 cups mixed greens, washed and dried well
4 medium strawberries, sliced
3 medium button mushrooms, sliced
1/4 cup crumbled, reduced-fat feta cheese
1 tbsp chopped walnuts
2 tbsp light vinaigrette
On the side: 200g low-fat yoghurt, any flavour
At home
Combine all ingredients except vinaigrette in a large plastic container. Pour dressing into a small plastic container.
At work
Add dressing to salad and toss. Serve immediately with yoghurt on the side.
Tip
Spinach or rocket can be used instead of mixed greens, but don't use iceberg lettuce. Its high water content makes it one of the least nutritious vegetables.
